Avocado Lunch – The Simplest Lunch Ever

If this Avocado Lunch looks like the simplest lunch ever…you’re right.  It is.  And it’s delicious!!  A fresh, ripe, creamy avocado in its purest forms beats the most elaborate lunch for me.  And the kicker: it’s SUPER HEALTHY!!

Without going into all the details (’cause, that would make this one LONG read) I can tell you that avocados have shown to help in the prevention of several types of cancer, it is good for your eye health, lowers cholesterol, is healthy for the heart, helps prevent strokes, allows you to better absorb nutrients, and finally: avocados provide a (too long to mention) list of vitamins and minerals in amounts that are totally rockin’ good for you!  Want the nitty gritty on why avocados are so super-duper awesome for ya?  Go to the Avocado Council and they’ll tell you all there is to know.

Growing up in The Netherlands avocados were not as readily available as they are here in Southern California.  Whenever I mention avocados to my mom, she complains that the only ones she can find never ripen, are small and tasteless.  My heart seriously breaks, as avocados are supposed to be creamy, soft, flavorful and delicious in everything from dips, to salads, to guacamole/relish, to…lunch!!

This lunch is seriously put together in less than 5 minutes (or the time it takes you to toast some bread).  It is healthy, fast, super yummy and easy bring along actually.  So, ditch the chicken nuggets, burger and hot dogs and join the avocado lunch bunch!


  • 1 ripe avocado
  • extra-virgin olive oil
  • balsamic vinegar
  • salt & pepper
  • a slice of some sort of bread (regular whole wheat bread, pita bread, flatbread will all do for this one)



  • Toast the bread lightly in either a toaster/on the grill/broiler
  • Half the avocado and remove the pit.
  • Mix together 1 part balsamic vinegar and 2 parts olive oil
  • Season with salt and pepper
  • carefully pour the oil/vinegar mixture into the hollow parts of the avocado where the pit used to be.
  • Serve with bread and you’re done.
