Green Salad with Apples, Toasted Walnuts & Romano Cheese

Ever since I started writing about food, my mom occasionally sends me recipes that either she has tried out and thinks should be shared, or that she thinks are right up my alley.  The recipe of this green salad falls in the first category.  She made it once, loved it, sent me the recipe and then forgot all about it.  Last winter she was visiting from The Netherlands and one evening I decided to make “her” green salad as a side dish.  Her response: “Oh honey, this is a great salad!  Can you write down the recipe?”  Love it!

This green salad is a great side dish with simple ingredients and tons of flavor.  The lettuce, apple and toasted walnuts all add their own “crunch” to the salad, while the Romano cheese beautifully compliments the nuttiness of the walnuts.  It’s a true “marriage” of flavors.  The ingredients are readily available, the time it takes to put it together?  I’d say about 10 minutes.  Yep, that’s all.

Green Salad with Apples & Toasted Walnuts

Ingredients:

  • 1 cup chopped walnuts
  • Salt
  • 2 tsp. extra-virgin olive oil (eyeball it)
  • 1 tsp. white wine vinegar
  • pepper to taste
  • 1 Fuji / Gala apple
  • 3 cups of mixed greens / red lettuce
  • Pecorino Romano cheese (shaved) for garnish

 

Directions:

  • Toast the walnuts on low heat until they start to become fragrant, about 5 minutes.
  • Sprinkle them with some salt and put the pan aside to cool.
  • Cut the apple in quarters, core and slice the quarters thinly (use a mandolin if you have one available).
  • Toss them in the salad bowl with the olive oil, vinegar and freshly ground black pepper.
  • Add the greens and toss, so that all the greens are coated with the dressing.
  • Toss the walnuts and top with the shaved Pecorino.

 

Serves: 2-3
