Kale Salad with Pomegranate, Sunflower Seeds & Almonds

For the longest time, I would have never considered eating kale in its raw form.  I grew up in The Netherlands where kale gets mixed in with mashed potatoes, served with smoked sausage and devoured during the winter months.  But raw in a salad?  Never would have considered that.  Until I found this recipe, which was included in one of my weekly organic fruit & veggie deliveries.

This salad is fresh, packed with goodness for you and absolutely delicious.  Oh, and it’s soooo EASY to put together.  5-10 minutes and you’re done.


  • 1/2 lb. kale
  • 2 tbsp. sunflower seeds
  • 5 tbsp. red pepper seasoned rice vinegar
  • 3 tbsp. olive oil
  • 1 1/2 cup pomegranate seeds
  • 1/3 cup sliced almonds
  • 5 tbsp. balsamic vinegar
  • Salt to taste


  • Wash and shake off extra water from kale.
  • Remove the center ribs and stems and discard.
  • Chop the leaves until fine but still leafy.
  • Combine the chopped kale, pomegranate seeds, sunflower seeds, and sliced almonds in a large bowl.
  • Toss to combine.
  • Drizzle the rice vinegar, balsamic vinegar, and olive oil over the kale mixture.
  • Season with salt and toss.

Serves: 2-3
