One of the most convenient dinners (for me) consists of marinating meat and throwing the meat on the grill for The Hubster to grill it. That is not to say that I kick back, relax and do nothing… (although, now that I think about it, that sounds pretty good to me) as I usually will take on the job of preparing the accompanying dishes.
This flank steak marinates overnight in balsamic vinegar. Now before you freak out, balsamic vinegar (though strong smelling in the bottle) offers so many possibilities. Its most obvious use is for vinaigrettes and salad dressings, however, it is also great in pasta dishes and for marinating strawberries (yes, it actually makes the strawberries incredibly sweet).
In this recipe of Balsamic Flank Steak, the vinegar not only adds flavor to the steak, but it also tenderizes the cut as it marinates overnight.
