Despite being born and raised in the Northern part of Europe, you know, the part where it actually gets cold, I was blessed with the opportunity to travel. Ever since I was 2 months old, my parents would travel with me: Germany, Belgium, France, Luxembourg, Austria, Switzerland, Italy were some of the “regulars”. As I got older, my passion for travel continued to develop and when I got accepted to a European college where it was mandatory to study abroad in your Junior year, I was delighted. “You’re telling me I HAVE TO travel, live in another country and learn about other cultures, languages and traditions? Oy, twist my rubber arm!! Uhhh, YES PLEASE!”
The traveling continued after graduation, but in the end, my favorite places I lived must be Spain and Italy. The culture, the weather, the lifestyle and the food are exactly what in my mind constitutes “La Dolce Vitta” (The Sweet Life). One of the aspects of the Mediterranean cuisine is that things are fresh; fresh cheeses, vegetables, fruit, sausages, milk, yogurt and pastas sold daily at Farmers’ Markets.
These Mozzarella & Roasted Red Pepper Paninis incorporate all the flavors that I have come to love and that remind me of the Mediterranean. They are easy to make, lend themselves perfectly for tea sandwiches or for lunch / dinner, especially when served with a fresh green salad.
