I made this Raspberry Spinach Smoothie for the picnic lunch I wrote about in my weekly article on Family Sponge. Yes, it contains spinach. No, you can’t taste it. Let me put it this way, this Kai with the smoothie:
He’s the toddler who “doesn’t do spinach” and also the one who asked for a second serving of this raspberry spinach smoothie. He knows the smoothie contains spinach. He asked, I answered. His response: “Yummy yummy in my tummy!” That’s all that counts for me and that tells mommy that this is a “keeper”.
So, how do we put this glass of health and flavor together? Easy:
Raspberry Spinach Smoothie
Ingredients:
- 1 cup yogurt (I used whole, you can use low fat if you prefer)
- 2 cups apple juice
- 1 cup spinach
- 2 cups frozen raspberries, semi-thawed
- 1 banana
- 2 tbsp. honey
Directions:
In a blender (or in batches using a food processor or immersion blender) puree all the ingredients until smooth. Serve immediately.
Makes: 3-5 glasses

This Raspberry Spinach Smoothie is great as part of a picnic lunch: combine it with the Cheese Sandwich with Sour Cream Spread, Radishes & Alfalfa Sprouts for the adults, the Cheese Sandwich with Sour Cream Spread & Cucumber for the kids, a mixed fruit salad, and an Apple Muffin and you have yourself a delicious picnic.
